While a pressure cooker is the ideal cookware to prepare pulao or rice-based dishes, you can try out a recipe without it. Here is how you can make your favourite pulao without waiting for the whistles to blow.
1 diced carrot, potato 1 capsicum, green chilli ½ cup cauliflower 1 cup peas 1.5 cups rice Water as needed Salt to taste ½ tsp turmeric, garam masala 1 tsp coriander powder, cumin Oil as needed 1 sliced onion 1 tbsp coriander leaves
Heat oil in a pan and saute potatoes and onions along with cumin seeds and green chilli.
Add other vegetables and saute them until they are 80-85% cooked.
Add the spices to the vegetables and wait for them to release oil.
Meanwhile, rinse and soak rice. Add it to the pan along with water.
Sprinkle salt to taste, and put on the lid.
After cooking for 10-15 minutes, your pulao will be ready to be served with raita.
