Coconut chutney is a delicious accompaniment with not just South Indian delicacies but also snacks and different kinds of breakfast. However, if you have coconut powder at home instead of a whole nariyal, here is how you can make lip-smacking chutney with it.
2 tablespoons roasted peanuts 2 whole red chillies 1 green chilli ¼ cup curd 1/2 teaspoon cumin & mustard seeds 6-8 curry leaves 1 teaspoon lemon juice ¾ cups coconut powder ½ teaspoon urad & chana dal Salt to taste ½ teaspoon sugar
In a bowl, mix coconut powder with curd and let it sit for at least 10 minutes.
In a hot pan, dry roast peanuts and add them to a blender along with the nariyal-curd mixture and green chillies.
Add some water and salt to taste and grind the ingredients into a fine paste.
In a small kadhai, prepare the tempering by sauteing chana dal, ural dal, mustard seeds, cumin seeds, red chillies, and curry leaves in oil.
Add the tempering to the nariyal chutney and give it a mix.
Serve the nariyal chutney with paratha or fried idli.
