Mawa is the foundation of many Indian sweets. Prepared by reducing milk, it is considered nutritious, not to mention its creamy consistency and binding nature that improve the texture and taste of any delectable.
Pour 1250 ml of milk into a thick-bottom pan.
Once it boils, reduce the flame. Keep scraping milk solids, and add to the concoction.
Continue stirring, scraping, and adding milk solids to milk.
Continue stirring, scraping, and adding milk solids to milk.
When there are bubbles in the reduced milk, switch off the flame and gather milk solids.
Store khoya in an airtight container and use as needed.
