Chole without onion and garlic? Yes, it’s possible to make delicious chana, chole, or rajma without onion and garlic. The taste isn’t the same but there will be no compromise in deliciousness. Here is a recipe worth a shot.
4 tomatoes 20 grams ginger 1.5 cups chickpeas 3-4 green chillies 1-2 potatoes 1 tsp turmeric & cumin seeds ¼ tsp black pepper & hing 1 tsp carom seeds & chana masala 1 tbsp tamarind pulp ½ tsp red chilli powder 2 bay leaves 2 tbsp kasoori methi Salt to taste
Soak chickpeas overnight and boil them with a masala bag comprising a black cardamom, teaspoon peppercorns, a couple of green cardamom, and a few cloves.
After pressure cooking chickpeas, remove the masala bag and prepare the curry in a kadhai.
After heating a pan, allow cumin seeds, ajwain, hing, and bay leaves to roast.
Pour tomato puree and let it cook. Add the remaining spices and tamarind pulp.
Continue with roasting spices until oil separates. Pour chickpeas and water to adjust the consistency.
Chole will be ready in 10-15 minutes. Garnish with fresh coriander leaves and serve.
