Cream Broccoli Soup is an increasingly popular dish that features flavourful broccoli simmered in a seasoned cream broth and serves as a perfect comfort food for winter. Prepare this soothing recipe in six easy steps.

2 Tablespoons Butter 1 Onion, Chopped 2 Cloves Garlic, Minced 4 Cups Fresh Broccoli Florets 3 Cups Vegetable Or Chicken Broth 1 Medium Potato, Peeled And Diced Salt And Pepper To Taste 1 Cup Heavy Cream 1 Cup Shredded Cheddar Cheese (Optional, For Garnish) Croutons Or Fresh Coriander For Garnish (Optional)

In a large pot, add chopped onions, and minced garlic and saute it until softened and fragrant.

Add broccoli florets, diced potato, and vegetable or chicken broth and season with salt and pepper.

Bring the mixture to a boil, then reduce the heat. Cover the pot and let it simmer for about 15-20 minutes or until the vegetables are tender.

Blend the mixture to make it a smooth soup.

Transfer the blended soup back into the pan and add heavy cream. Heat up the soup on low flame.

Adjust seasonings and take the soup out in bowls. Top with crunchy croutons, shredded cheese or fresh coriander. Serve it hot and enjoy.
