Kolkata Biryani is a delicious rice dish that is known for its subtle flavours and use of potatoes along with meat. Here is how you can make this biryani in 6 simple steps at home.

500 grams of chicken 1 cup curd 2 tbsp ginger-garlic paste 1 teaspoon red chili powder 1/2 teaspoon turmeric powder 1 teaspoon garam masala 2 cups basmati rice 2-3 green cardamom pods 2-3 cloves 1-inch cinnamon stick Salt to taste 2 large onions, thinly sliced 2-3 medium-sized potatoes 1/4 cup chopped cilantro 2 tablespoons ghee Oil for frying

Marinate the chicken pieces in a mix of curd , ginger-garlic paste, red chilli powder, turmeric, garam masala, salt.

Soak 2 cups Basmati rice for 30 minutes, then cook with green cardamom, cloves, cinnamon, and salt until 70-80% done. Drain.

Fry thinly sliced onions until golden and set aside. Fry halved potatoes until golden, too..

In a heavy-bottomed pot, layer half the rice, marinated chicken, fried potatoes, green chillies, mint, cilantro, and the remaining rice. Drizzle fried onions on top. Then, add ghee.

Seal the pot with a tight lid or foil and cook on low heat (using a tava if possible) for 25-30 minutes.

Rest for a few minutes, then fluff the biryani with a fork and serve hot. You can add boiled eggs too.
