Eggplant, Aubergine, Baingan, it's one of those vegetables that people either love or hate.  But if you love it, good news, so does most of the world. There are dishes celebrating the vegetable in almost every country, let's check out some of the most popular.

Baingan Bharta - India

Here's one we all know, this dish is known as a comforting homely dish made with roasted eggplant, tomatoes and spices. 

Baba Ganoush - Lebanon

This creamy dip is often served as part of a mezze platter along with hummus and pita bread.

Makdous - Syria

Here, the eggplants are cured in olive oil to bring out a sour tang and then stuffed with peppers and walnuts.

Caponata - Italy

This dish from Sicily is made from chopped and slow cooked eggplant and other seasonal vegetables in an agrodolce sauce.

Ratatouille - France

Layers of eggplant, zucchini, squash and tomatoes are stacked and slow-cooked to make this now-famous dish.

Moussaka - Greece

Similar to a lasagna, mincemeat is layered with eggplant and topped with cheese in this rich comfort dish.
