To ferment dosa batter, you need a humid environment and some active ingredients. When fermented to perfection, the batter can be used to make the softest idli and crispiest dosas. Here are some tips you must note.
In winter, it is difficult to find a humid spot around the house. You can heat a cooker, and place the batter container inside it. Cover it for a few hours.
Instead of a cooker, use hot water. Fill a large container with water and place the vessel containing batter in the middle of it.
If you are lucky and the sun is shining bright on your balcony, place the batter outside. Make sure the lid is closed and the container gets enough sunlight.
A preheated oven is also a hot and humid spot where you can keep the batter for fermentation. You can take out the vessel, preheat the oven again, and repeat the process.
Not many know but you must grind soaked fenugreek seeds with lentils and rice. They act as catalysts to ensure fermentation happens without hassle.
Place a bowl of steaming hot water in the cupboard and keep the vessel with batter beside it. The steam will create the right atmosphere for fermentation.
