French fries are the ultimate comfort food on any day. The potato sticks are served as sides with sandwiches and burgers and can be topped with cheese, bacon and sour cream. Making perfect batches of crispy French fries can sometimes be a challenge. Here are some tips to make hot, crispy fries.
Use potatoes that are fresh and have low moisture content for that crunchy quality. Waxy potatoes lack the required starchiness necessary for a good crisp.
Use salt water to soak potatoes for at least an hour before frying. This increases the rigidity of the potatoes giving them that desired crunchiness.
To remove all moisture from the fries, fry soaked potatoes for about a minute at low temperature. During the second fry, increase the heat for acquiring a crispy texture and a golden-brown hue.
Try to place the fried potatoes on a cooling rack to release excess steam from the hot fries. Using paper towels will trap the residual heat and turn the fries into a soggy mess.
The key to a plate of perfect French fries is uniform frying. Keep monitoring the temperature of the oil and fry potatoes in small batches to ensure they are all cooked and fried evenly.
