Finding lumps in your pasta sauce even though you followed the recipe faithfully? Fret not, here are some tips to fix a lumpy bechamel or white sauce pasta for making it creamy, silky and smooth.
If you find lumps in your pasta sauce, take it off the heat and once it cools down a little, use a hand blender to bring the sauce together. Add some water if required, and put it back on the flame.
If you see small lumps forming in the sauce that you cannot get rid of, strain it to giving a lump-free, silky, smooth texture to your bechamel.
Big lumps in pasta sauce can be hard to whisk. Take the saucepan off the heat and simply add some ice-cold water to it so that the lumps break down without sticking to the pan.
If you see lumps forming soon after you have added milk to the pan, whisk vigorously to get rid of the small lumps and keep stirring until the sauce acquires a smooth texture.
A lumpy sauce could also be indicative of a mixed-up ratio of butter to flour. Stir some milk into the saucepan to adjust the doughy mix and break the lumps for a smoother sauce.
