Masala puri is a popular street food that combines crispy puris with a spicy, tangy gravy made from white peas, potatoes, and aromatic spices. Perfect for a quick and tasty snack.
1 cup of white peas 1 chopped potato ½ tsp. turmeric ½ tsp. clove 2 tbsp. oil 1 tsp. fennel seeds 1 chopped onion and 1 tomato 1 tsp. ginger-garlic paste
1 cup of water 1 tsp. salt 4 puris 1 tsp. tamarind chutney 1 tsp. green chutney 2 tbsp. spicy sev 1 tsp. chopped coriander Pinch of chaat masala
Soak 1 cup of white peas in water for 8 hours. Pressure cook soaked peas with potato, turmeric, clove, and 3 cups of water for 6 whistles.
Mash the potato slightly and set it aside. Sauté fennel in oil, then add onion, ginger garlic paste, and tomato.
Blend the mixture with the mint and coriander leaves into a smooth paste. Heat oil, add cumin, bay leaf, and cinnamon, then sauté until aromatic.
Add spice powders, cooked peas, water, and salt, then simmer for 10 minutes.
Sprinkle with chaat masala and serve.
