Sindhi kadhi is a tangy and spicy curry made with besan and vegetables. It is a favourite in Sindhi households and is served with steamed rice and papad. The combination of tamarind and spices makes it a comforting and wholesome meal.
¼ cup besan (gram flour) 2 teaspoon oil ½ teaspoon mustard seeds ½ teaspoon cumin seeds ¼ teaspoon fenugreek seeds ¼ teaspoon turmeric powder ½ teaspoon red chilli powder 1 small drumstick ½ cup potatoes ¼ cup okra ¼ cup carrots 1 teaspoon tamarind pulp Salt to taste 4 cups water Fresh coriander for garnish
Heat oil in a large pan and add besan. Roast on low heat until it turns golden brown and fragrant.
Add mustard, cumin, fenugreek, turmeric, and red chili powder to the roasted besan. Mix well for 1 minute.
Add the chopped vegetables (drumstick, potatoes, okra and carrots) to the pan and sauté for a few minutes.
Add water and bring to a boil. Reduce heat and simmer for 20-25 minutes until the vegetables are cooked.
Add tamarind pulp and salt. Simmer for 5 minutes. Garnish with fresh coriander and serve hot with steamed rice.
