You may have often noticed that chapattis turn hard after some time they are made. This is not because the wheat is bad, but because you’re not using the right technique. Here are 5 tips to make soft rotis. Take a look:
While kneading the dough, try using warm water instead of cold water for soft chapattis. Warm water aids in gluten development which is essential for elasticity and a soft texture.
While kneading, mix wheat flour with water and continue kneading. This will add elasticity to the dough.
After kneading, cover the dough with a damp cloth or plastic wrap and let it rest for at least 15-30 minutes. Resting allows the gluten to relax, making it easier to roll out the chapattis and resulting in a softer texture when cooked.
While rolling the rotis, there shouldn’t be any air pockets. Moreover, if the thickness is even, you’ll get soft rotis.
When cooking chapattis on a tawa, ensure that the heat is at a medium-high level. Too much heat can cause the chapattis to cook too quickly and become crispy, while too little heat can make them hard and undercooked.
