For days when you find yourself with minimal ingredients but crave a warming bowl of soup, this five ingredient version does the trick just right. Enliven gloomy rainy days with a bowl or two of this simple recipe, and enjoy alongside some salad or a piece of toast.
6-7 medium tomatoes, diced 2 onions, diced 8 whole black peppercorns 1 teaspoon butter 1 pinch sugar Water, as needed Salt, to taste
Combine the tomatoes, onions and peppercorns in a saucepan and fill halfway with water.
Simmer for 8-10 minutes, until the vegetables have softened before cooling slightly and blending.
Once the mixture is smooth, transfer back to the saucepan and adjust consistency if needed.
Season with salt and sugar and bring to a boil before turning off the heat and finishing with butter. Serve hot.
