3 mangoes 1 lt full fat milk ½ cup sugar ½ cup milk powder 1 tbsp cornflour
Take a heavy bottomed pan and add milk. Let it simmer for at least 27 to 30 minutes or till the milk is reduced to half.
When malai starts forming, scrape off the sides and keep stirring. Make sure that milk doesn’t burn.
Add milk powder and let the milk cook for 5 more minutes. Add sugar and let it cook for 4 to 5 minutes.
Now add milk powder and cook for another 5 minutes. Add sugar and cook it again.
Add cornflour slurry and cook for 4 minutes. Let the mixture get thick and creamy. Turn off the flame and let it cool.
Add mango pulp to the mixture and mix well. Pour the mixture into moulds and garnish with nuts. Let it freeze overnight.
When done, take out the kulfi and serve!
