The classic Goan sweetmeat is prepared during the holiday season, with semolina, desiccated coconut and loads of butter and is finished off with cherries.
A slightly unusual specialty from Puducherry, this cake is deep-fried instead of baked and is made with red rice, grated coconut and jaggery with a boozy touch of toddy and nuttiness of cashews.
Also known as Borodin’er cake, this Bengali sweet is a delightful combination of dried fruits and nuts soaked in rum and filled in the cake. It is commonly-found in Kolkata during Christmas.
As the name suggests, the cake belongs to Allahabad in Uttar Pradesh. An Anglo-Indian recipe, it is made with desi ghee mixed with petha and marmalade.
The Parsis celebrate Christmas with a lot of pomp and show and the classic plum cake is a moist and dense mix of orange peels, ginger and cherries soaked in rum that lend it sweetness.
