While meat and rice are the star ingredients of biryani, masala is the backbone of it. Without biryani masala and other spices, you cannot infuse aroma and flavours into the dish. The masala is available in the market, but it doesn’t taste as authentic as the one you can make at home. Try this biryani masala recipe to make the best variant.

Ingredients

5 Kashmiri red chillies 5 bay leaves 1 tablespoon cumin seeds 1 teaspoon cloves 2 star anise 3 tablespoons coriander seeds 1 nutmeg 1 tablespoon black pepper 1 tablespoon amchur powder 1 tablespoon caraway seeds 2 cinnamon sticks ½ teaspoon turmeric powder 3 black cardamoms 8-10 green cardamoms 1 teaspoon fennel seeds Salt to taste

Step 1

Heat a pan and roast cloves, cinnamon sticks, nutmeg, bay leaves, and black and green cardamoms.

Step 2

After a couple of minutes, add cumin seeds, caraway seeds, red chillies, fennel seeds, peppercorns, and coriander seeds.

Step 3

After roasting whole spices, add turmeric powder, salt to taste, and amchur powder to the mixture.

Step 4

Let the combination of spices cool off and add it to the blender.

Step 5

Store the biryani masala in an airtight container and add a generous amount while making the dish at home.
