Kerala pathiri is a traditional flatbread from the South Indian state of Kerala. It's lighter than a traditional roti and very thin. With only a few ingredients and less oil, it's the perfect healthy daily bread substitute.
1 cup Rice Flour + extra for dusting 1 cup + 2 tablespoons Water ½ teaspoon Oil
In a kadai add oil and water and bring it to a boil over high heat. Reduce heat and gradually add rice flour, stirring continuously.
Turn off the heat. Cover the mixture and let it cool. When still slightly warm, knead the mixture until it forms a soft, pliable dough.
Divide into 10 equal portions and shape into round balls. Take a dough portion, coat it with flour and roll it into a disc.
Heat a non-stick tawa or griddle over medium heat. Place the rolled circle on it and cook for 30-40 seconds.
Flip and cook for another 20-30 seconds until light brown spots appear. Flip again and cook until it puffs up. Serve warm.
