This quick and nourishing veggie soup is a delicious way to support your weight loss journey. Packed with fibre and nutrients, it's a satisfying option to help you feel fuller while maintaining a healthy calorie intake.
1 onion, diced 2 cloves garlic, minced 2 carrots, sliced 2 celery stalks, chopped 1 bell pepper, diced 4 cups vegetable broth 1 can diced tomatoes 2 cups chopped kale 1 tsp dried herbs Salt and pepper to taste
In a large pot, sauté onion and garlic until fragrant.
Add carrots, celery, bell pepper, and cook for 5 minutes.
Pour in vegetable broth and diced tomatoes, bring to a boil.
Reduce heat, add kale and dried herbs, simmer for 10 minutes.
Season with salt and pepper. Serve and enjoy!
