If you’re in a rush but still want a tasty meal, these easy 15-minute noodles are the perfect solution. Whip them up with whatever you have in the fridge for a meal on the go

250g egg noodles 2 tablespoons vegetable oil 1 onion, finely chopped 2 cloves garlic, minced 1 red bell pepper, thinly sliced 3 tablespoons soy sauce 2 tablespoons peanut butter 1 tablespoon honey 1 teaspoon curry powder 1/2 cup coconut milk Salt and pepper to taste Chopped peanuts and fresh coriander for garnish

Cook the egg noodles according to package instructions. Drain and set aside.

In a large pan or wok, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until softened.

Add thinly sliced red bell pepper to the pan. Stir and cook for a couple of minutes until the vegetables are slightly tender.

In a bowl, whisk together soy sauce, peanut butter, honey, curry powder, and coconut milk until well combined.

Pour the satay sauce over the cooked noodles and toss until the noodles are well coated in the sauce. If using chicken, ensure it's evenly distributed.
