Don’t have time to cook yourself an elaborate meal because you’re swamped with work? This harissa pasta recipe might just be what you need.
350 grams spaghetti/fusilli 100 grams broccoli/mushrooms 3 cloves minced garlic 1 tablespoon harissa paste 1 tablespoon lemon zest Juice of 1 lemon 1.5 tablespoons olive oil ¼ cup shredded chicken/bacon bits 1 tablespoon butter Salt to taste
Boil pasta of your choice and set aside. Blanch the broccoli in hot water for 3 minutes and run under a cold-water tap, to prevent overcooking.
Sauté the garlic in a pan with some olive oil and add in the mushrooms, if using any.
Add the harissa paste, followed by the bacon bits or chicken and stir well.
Add some pasta water to deglaze the pan and throw in the cooked pasta along with some butter.
Mix everything well so that the harissa sauce evenly coats each piece of pasta.
Garnish with plenty of chopped parsley and serve with some salad or warm bread on the side.
