Blend the flavours of the Mediterranean to create a quick-and-easy salad loaded with couscous, chicken and veggies for a healthy meal after work. Here is the simple recipe for you to try out.
2 chicken breasts ½ tsp cumin powder ½ tsp paprika powder ½ tsp garlic paste Salt to taste 1 tbsp olive oil 1 cup couscous 2 cups hot water 1 onion, sliced ½ cup cherry tomatoes, halved 1 cup colourful bell peppers, chopped 3 tbsp olives, chopped 2 tbsp vinaigrette 3 tbsp parsley, chopped

Wash, clean and pat dry the chicken breasts, then marinate with cumin, paprika, garlic and salt.

Place the couscous in a large bowl, add salt and hot water and cover until the grain is cooked.

Heat olive oil in a pan, place the marinated chicken breasts and cook until golden brown and done.

Fluff up the cooked couscous then add the onions, cherry tomatoes, bell peppers, olives and parsley.

Add the vinaigrette and toss well. Slice the chicken and serve the salad while everything is warm.
