Bharela bhinda is a Gujarati dish that is typically prepared by stuffing okra with ingredients, including gram flour, masala, and nuts. This flavour-packed dish makes for an appetising meal and can be savoured with roti. Here’s a simple bharela bhinda recipe.
250 grams green okra Fenugreek seeds ¼ cup finely grinded peanuts 2 tbsp roasted gram flour 4 tbsp oil 1 tbsp turmeric powder 3 tbsp sesame seeds ¼ tbsp asafoetida
3 tbsp coriander powder 2 tbsp red chilli powder 1 tbsp garam masala 1 tbsp cumin powder 2 tbsp garlic paste ¼ cup chopped coriander leaves 2 tbsp lemon juice 2 tbsp sugar Salt to taste
Rinse and dry the okra thoroughly. Then, carefully, slice off the top and bottom parts of the okra. Divide the okra into two equal shares.
In a pan on low to medium heat, introduce the fenugreek seeds, sliced okra, turmeric powder, and salt. Mix them thoroughly.
Close the pan with a lid, and allow the concoction to cook on a low flame for approximately 10 minutes.
In a separate bowl, blend the remaining ingredients, including the various spices, crushed peanuts, gram flour, garlic paste, lemon juice, and coriander leaves. Mix these ingredients thoroughly.
Add this newly crafted masala into the cooked okra mixture. Cover the pan once again and allow further cooking for an additional 2–3 minutes.
After the okra and the masala have melded seamlessly, savour the bharela bhinda dish with roti or lay it out for serving.
