Quick, Cooling Cucumber Rice For Summer

Cucumber rice is a refreshing and cooling summer recipe that combines the lightness of cucumber with the satisfying texture of rice.  This dish is not only delicious but also perfect for hot summer days when you crave a light and hydrating meal. 

Ingredients

2 cucumbers, grated 4 cups cooked rice ¼ cup fresh coconut, grated ½ tsp ginger, finely grated ½ tsp chilli, finely chopped Pomegranate seeds to garnish Pink salt to taste Juice of 1 lemon Fresh coriander, chopped ¼ cup chopped onions

Step 1

Grate or finely chop the cucumbers and add grated coconut, ginger, and chilli.

Step 2

Mix this together with the cooked rice. 

Step 3

Season with pink salt and lemon juice according to your taste.

Step 4

Garnish with coriander and pomegranate seeds.

Step 5

Optionally, prepare a dry tadka by tempering peanuts, dals, cumin, and mustard in a separate pan and add it to the mixture for added taste.
