  • 500 gram Potatoes grated
  • 300 gram Courgette grated
  • 3 Spring onion finely chopped
  • 20 gram Ginger finely chopped
  • 1 tablespoon Curry powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Black pepper corn roughly ground
  • 100 gram Plain flour
  • 50 gram Bread crumbs
  • 1 Oil for deep frying ltr
  • As required Salt

step 1

  • STEP 1.1 in a large mixing bowl add 500 gm grated potato and 300 gm grated courgette.

  • STEP 2.2 to this add 3 finely chopped spring onions and 20 gm finely chopped ginger.

  • STEP 3.3 next add 1 tbsp curry powder, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp coarsely ground balck peppercorns and salt to taste.t

  • STEP 4.4 add 50 gm plain flour and mix all the ingredients together to combine well.

step 5

  • STEP 5.5 once well mixed, add another 50 gm plain flour and continue to mix well.

step 6

  • STEP 6.6 in a bowl place 50 gm breadcrumbs.

step 7

  • STEP 7.7 take 1 tbsp of mixture and roll it by hand to form a ball.

step 8

  • STEP 8.8 place each ball in the bowl of bread crumbs and ensure that they are evenly coated.

step 9

  • STEP 9.9 arrange the rolled and coated balls in a plate till all the mixture is shaped into balls.

  • STEP 10.10 in a wok heat 1 ltr of oil for deep frying.

step 11

  • STEP 11.11 when the oil is hot , add the balls one at a time to the wok and deep fry the balls in small batches. Do not over crowd the wok.

step 12

  • STEP 12.12 fry on medium heat for 5 minutes till evenly golden and cooked through, turning the balls frequently.

step 13

  • STEP 13.13 use a slotted spoon or a sieve and remove the courgette and potato rolls from the hot oil. Place the balls on a kitchen paper towel to drain off the excess grease.

  • STEP 14.14 serve hot.
