A very delicious, healthy Kerala dessert made with rice. This dish is prepared from rice, coconut milk, jaggery, dry ginger, cardamom and topped with dry fruits.
STEP 1.In a pan take washed rice and add 1 ½ cup of third extraction milk and 1 cup of water. Allow the rice to cook.
STEP 2.Add sieved melted jaggery and bring to boil. Continuously stir the ingredients.
STEP 3.When boiled add 1 ½ cup of 2nd extraction coconut milk. Let the mix boil and reduce to half. Stir well.
STEP 4.Now pour in 1 cup of first extraction milk and stir well for 1-2 minutes. Turn off the flame.
STEP 5.Add a pinch of salt, 4 crushed cardamom, ½ tsp cumin seeds and 1 tsp of crushed dry ginger.
STEP 6.Mix well all the ingredients.
STEP 7.In a pan add 2tbsp of ghee. Stir fry 50gm each of cashew nuts and raisins. Transfer them to garnish the payasam.
