STEP 5.Add turmeric powder, red chili powder, and hing (asafoetida). Stir well.
STEP 6.Add the boiled and mashed potatoes, salt, and garam masala. Mix everything thoroughly.
STEP 7.Cook for 3-4 minutes, then turn off the heat. Add chopped coriander leaves and lemon juice. Mix well.
STEP 8.Let the mixture cool down slightly, then shape it into small balls (about the size of a walnut or a little smaller).

STEP 10.In a bowl, combine the chickpea flour (besan), turmeric powder, red chili powder, salt, and baking soda.
STEP 11.Add water little by little and whisk to make a smooth batter that is thick enough to coat the potato balls (vada) without dripping off.

STEP 13.Heat oil in a deep pan .
STEP 14.Dip each potato ball into the batter and coat it evenly.
STEP 15.Gently drop the batter-coated vadas into the hot oil. Fry in batches, making sure not to overcrowd the pan.
STEP 16.Fry the vadas until they are golden brown and crispy on all sides. Remove and drain on paper towels.

STEP 20.Tamarind chutney
Dry garlic chutney
STEP 21.You can toast them lightly with butter or serve them as is.
STEP 22.Spread green chutney , garlic dry chutney and tamarind chutney on the inside of the bread .
STEP 23.Place a fried vada in the center of each mini bread . Garnish with a little more chutney.
STEP 24.Serve immediately!
