This refreshing salad is perfect as an appetizer or starter at the dinner table. Ive had it in mind since i first tried it at one of the cocktail parties of a foodie conference in miami. Ive been madly in love with it ever since. Considering the size of my mint plant, i was encouraged to prepare this salad to use some of the fresh leaves. The only thing left to purchase was the cheese and that settled it; one night during the weekend i went to work cutting up watermelon.
