• 2 tablespoon Olive oil
• 2 teaspoon Raw honey
• 0.125 teaspoon Kosher salt
• Freshly ground black pepper, to taste
• 2 cup Cubed watermelon
• 2 cup Peeled and cubed jicama
• 1 Large cucumber, peeled, seeded and cubed
• 0.25 cup Thinly sliced red onion
• 2 ounce Cubed or crumbled feta cheese
• 1 tablespoon Chopped fresh mint leaves
