When we first came across this recipe from alex bookless in imbibe magazine, we were amused by what we thought was a lazy name. But then we made it, and learned just how fitting the name is that cucumber cocktail is exactly what it is, a perfect suspension of cucumber flavor in a classic cocktail proportion. The simple syrup and lime (or lemon, if you prefer) perfectly elevate the cucumber notes, and the mint brings in a garden-fresh herbacious scent. Its utterly delightful.
