Tabouleh (also spelled tabouli) is a traditional Lebanese salad made with parsley, bulgur, tomato, onion and mint, and a lemon and olive oil dressing. It originated in Lebanon and Syria and was an important part of people’s diets in the Middle Ages. Initially, it was ostracised because it doesn’t use meat but people gradually began accepting and loving it for its taste and healthiness. Tabouleh is a marker of Lebanese identity and is a household name. The recipe for tabouleh has spread across the world as more vegetarian and vegan people looked to incorporate it into their meals. The salad is a staple of mezze, which is a selection of Lebanese appetisers. The world’s largest bowl of tabouleh has also made it to the Guinness World Records, with a weight of 4,324 kilograms, which took 350 people to make.
