Spinach cakes or spinach vadis are quite popular dish in maharashtra, gujarat region. It is prepared in various ways by altering few ingredients like flour, spices. In this recipe i have used wilted spinach leaves, gram flour and rice flour seasoned with spices and balanced with jaggery and lemon juice. These are shallow fried or deep fried and eaten for breakfast or with dal rice. These tastes awesome. Add more chilli powder or green chillies if you want it spicier.
