The souse is essentially pickled pork. Hog head cheese is not actually cheese, but a sort of meat aspic made from pig heads and feet and usually served as a cold cut or appetizer. Souse, a light Caribbean dish, served cold, that traditionally consists of pickled pig meat in a clear broth flavoured with various seasonings.
