Halwa comes from the Arabic word, hulw meaning something sweet. From the simple Turkish preparation of sesame seeds and honey, halwa evolved into a mix of flour, nuts and sugar. One such halwa was the Sohan halwa. Different from the soft and moist preparations, this Sohan halwa was a solid dessert that dates back to the Mughal days. Post Aurangzeb's reign, the situation was Delhi was too good yet the Mughlai cuisine managed to survive. Originally a Persian dessert derived from sohan-e-qom, a brittle dessert in their fare, the halwa travelled to India with the Mughals of Persian descent. Comprising of oodles of ghee, this halwa is available in solid circular form. Apart from gramflour, ghee and milk, several nuts like almonds are added to the halwa along with other ingredients. Infact, till date you will find many shops that are renowned because of their Sohan Halwa in India and Pakistan.
