Ridge gourd Chutney Recipe

Who said only coconut, tomato and onion chutneys go well with Idli, Dosa and Upma. If you once make this Ridge gourd Chutney and taste it you will become a fan of this chutney. Interesting way to make children to eat veggies as side dish. Recipe: Slightly peel the edges of the ridge gourd and cut the ridge gourd in to thin rounds. Take 5 shallots ( baby onions) peel and keep aside. In a kadai add 2 teaspoons of oil and fry one table spoon of chana dal, urad dal,. four red chillies and 1/4 teaspoon of methiseeds to golden brown and keep aside. Heat the kadai again with two table spoons of oil and saute the ridge gourd pieces and shallots in medium flame till the stuff becomes soft. Allow to cool down Add all the fried and sauted ingredients in a mixie jar with asafoetida powder,salt and small piece of tamarind. Grind to paste. Do the seasoning with mustard, urad dal and curry leaves. This can also be mixed with steaming rice.
