When i was a little girl, my mom used to make homemade minestrone soup. Everyone loved it, but i remember she had to start making it early, way ahead of time, since she used dry beans and fresh veggies. The cooking process was, accordingly, a bit more involved, and required more time in the kitchen. Today, i bring you a quick and easy version of this delicious soup. Its ideal for those weekdays when you just dont have a lot of time to spend in the kitchen. Basically, this a complete meal made in one pot. If you want to spoil your family even more, pair this soup with totino.
