In the late 1800's, Japan witnessed an onslaught of Western influence. During the Meiji era, many foreigners, military officials, brought with them their own food, which gave rise to the Yoshuku food, or the class of Japanese food that is heavily inspired by the West. Japanese Hambagu and potato Korokke are some fine examples. For the longest time, meat was considered taboo due to the prevalence of Buddhism , and only vegetarian food was considered proper. Even this attitude changed in the latter half of 19th century.
