This potato salad with shrimp is a variation on the well-known russian salad. Potato salads with vegetables and mayonnaise are very popular in many latin american countries. On this occasion, i have added shrimp to my traditional potato salad recipe and it turned out riqusima I love to prepare and eat salads. During summer, my favorite salads are those that have protein so i can enjoy them as a main course or serve them to my friends and family in barbeques and picnics. The best part of this potato and shrimp salad is that its simple and easy to prepare. If you have all the ingredients in the fridge, this meal can be made quickly and its a complete lunch.
