Feel free to switch out the parsley with spinach to make a mint and spinach pesto. Since parsley is on the milder side, it complements the mint well. We wouldn't recommend combining two strong-flavored herbs like basil and mint, as they may overpower one another. Feel free to leave out the almonds if you are allergic to tree nuts.
