A cassava vegetable broth seasoned with spices. Root vegetables and coconut milk are really all you need to make metemgee. Everything else just complements these ingredients. In Guyana root vegetables are called ground provision. Imagine yuca (cassava), sweet potatoes and malanga are bathed in coconut milk and cooked to perfection. The rich coconut milk broth is what makes metemgee stand out. To make the broth, sauté onion and garlic in coconut oil which compliments the flavor of the coconut milk.
