• 185 gram Jar malaysian curry paste
• 800 gram Chicken thigh fillets, trimmed, halved
• 2 tablespoon Coconut milk
• 2 Large desiree potatoes, quartered lengthwise
• 1 teaspoon Sugar
• 50 gram Unsalted peanuts, roasted, roughly chopped
• sprig Coriander to serve
• Hard boiled eggs, to serve
