Its name directly translating to "lebanese nights", "layali lubnan" is a ubiquitous and well-loved dessert not only in lebanon, but throughout the middle east. It is an incredibly delicious dessert, at its base is a soft, yet sliceable semolina pudding that’s then covered in rose flavoured cream, fruits, nuts and simple sugar syrup or drizzled with a rose-scented syrup. Traditional versions are almost always garnished with pistachios. I prefer to make it without the syrup and like to add a few drops of pink food colouring to give the dessert a vivid pick of colour which contrasts so beautifully with the whipped cream.
