Kinshi tamago is essentially shredded or julienned usuyaki tamago or thin Japanese omelette similar to crepes. Usuyaki Tamago translates to "thin grilled egg" (tamago is the Japanese word for egg) and is usually used to wrap chirashi sushi. Kinshi tamago may be used to garnish noodles and sushi to add colour and texture. Both don’t require any other ingredients besides egg and salt. The technique used to make Japanese omelettes must be mastered to be able to make a perfectly thin sheet. Japanese omelettes are layered, with one beaten egg usually forming one layer. How and when the egg is flipped is important, too. Japanese omelettes are made in rectangular pans called makiyakinabe or tamagoyakiki.
