Gazpacho is a summer drink from the andulasian region and finds a place in every meal from spain and portugal. It is basically bread, onion, garlic, a fruit and vegetable, bell peppers, cucumber, salt and lemon juice. I have made slight changes to include zucchini, spinach, and coriander to make it green.
