Gajar ka halwa is an emotion that every Indian is familiar with. The word Gajar means carrot, and Halwa is an Arabic originated word that means sweetmeat though there is no meat involved in Gajar ka Halwa. A traditional sweet ( halwa) is made of grated carrots cooked in ghee, milk and sugar and flavoured with cardamom and cashew nuts. Gajar Halwa is a quintessential Indian dessert cherished by many people,, especially during the winters when Gajar (carrot) is readily available in the market. Mix the carrots and milk in a pan and bring to a boil. Cook on low flame, occasionally stirring, until milk dries up. It's rich, creamy and does decadent. One can use ghee, nuts, and cardamom for added flavours, though, but if you want to make the halwa without ghee, go ahead because it still tastes great. It is also known by the names gajorer halua, gajrela, gajar pak.
