Directions : Fish & Vegetables In Bamboo Steamer Recipe
STEP 1.Soak the bamboo steamer for a few hours or even overnight in water.
STEP 2.1 line the bamboo steamer with banana leaf, so that the fish does not stick to the steamer.
STEP 3.2 in the lower steamer tray place 2 fillets of salmon on the leaves. Season with salt and pepper. Drizzle extra virgin olive oil.
STEP 4.3 line the top steamer tray with banana or iceberg lettuce leaves and place the florets of broccoli. Season with salt and pepper and drizzle extra virgin olive oil. Place the tray over the fish tray. Cover with the bamboo lid.
STEP 5.4 in a wok add water to just below the level of the steamer as the boiling water should not touch the fish.
STEP 6.5 add salt to the water as it makes a hotter water. Also add 1 to 2 tbsp of whole leaf tea, as the steam of the tea enhances the flavour of the steamed food.
STEP 7.6 place the bamboo steamer in the wok with boiling water.
STEP 8.7 allow it to steam for 12 to 15 minutes.
STEP 9.8 when cooked, carefully remove the top tray off the steamer first.
STEP 10.9 serve the broccoli and salmon with a squeeze of lime juice and a drizzle with some more extra virgin olive oil.
