The quintessential Rajasthani dal baati churma combination is a delight to the taste buds. The dish consists of a baati (made of wheat flour), dal (lentils) and churma (a crushed sweet ladoo). The origins of this dish can be traced back to a time when the Mewar kingdom was fighting its battles. The founder, Bappa Rawal and his soldiers devised a way to bake the dough (baati) under the sun while they went to fight. They would then eat it with curd on their return. The churma was an accidental meeting when a cook dropped some sugarcane juice over the hard baati. The Guhilot dynasty loved the soft baati so much that it was made part of the dish. Finally, the dal made it's way during the Gupta period, when panchemal dal was introduced to the people by a royal cook and it was quickly adapted to the dal and churma combination.
