A popular street food called Chinese flat bread or XiaoBing is shallow fried and has a juicy filling of seasoned ground beef and crispy skin. One of the most popular street foods in northern China is a flatbread, jian bing. Cooked to order, the vendor spreads a thin pancake batter in a perfect circle on a hot griddle. In a few seconds, after the batter has set, she cracks a raw egg onto it, breaks it up, and spreads it all over the pancake.
