The word curry has been very commonly associated with India time and again. We rejoice at eating a variety of vegetarian and non-vegetarian curries. One of them is the Jalfrezi. This dish and cooking technique dates back to the time of British Raj, which is approximately 200 years old. The colonial rule is credited with the invention of Jalfrezi. Since several Indians were working under the British during that time, they used to prepare lavish feats for them. This meant that there ought to be leftovers in the kitchen which were left to the Indians to finish. The distinction in tastes and palate made the servants spruce up leftover meat by frying it and tossing it onions and green chillies. This resulted in a thick and fiery gravy which was called Jalfrezi. The term comes from two words, Jal or jhal meaning spicy in Bengali and frezi referring to stir-fry. Chicken Jalfrezi is a chicken currywhich is stir fried with vegetables. It is made with marinated chicken and has a very nice texture.
