When we think of omlette, it is generally the English omlette that pops up in our heads. For the uninitiated, omlette is a dish made from eggs where the eggs are whipped together and filled with all kinds of vegetables and spices. The egg mixture is spread on a pan cooked from both sides before being folded into a semi-circle. The origin of omlette goes back to France when Napoleon Bonaparte was leading the country. His army rested at an inn when they were served an omlette and Napoleon fell in love with it. It became such a rage that a giant omlette is prepared for Easter every year in the small town of Besseries where Napoleon had stopped by. When you hear that it is a cheesy omlette, it usually means it would be egg and cheese. This recipe adds a twist to your regular omlette by making it without any eggs. A variation of omlette is made with gram flour, all purpose flour, baking powder, some chopped vegetabes , herbs and spices.
